White Wine Mushroom Prime Rib

Ingredients

  • Braveheart Beef Prime Rib Roast

  • 1 cup unsalted butter, softened

  • 6 garlic cloves, minced

  • 1 tbsp chopped fresh thyme

  • 1 tbsp chopped fresh rosemary

  • 1 tbsp chopped fresh parsley

  • 1 tbsp salt

  • 1 tbsp black pepper

  • 1 package crimini mushrooms, sliced

  • ¼ cup olive oil

  • ½ red onion, diced

  • 2 garlic cloves, minced

  • ¾ cup water

  • ¼ cup dry white wine

  • 1 chicken bouillon cube

  • ½ tsp dried basil

Directions

  1. Preheat an oven to 450F. Remove prime rib from fridge and let rest for 30 minutes or until room temperature.

  2. In a large bowl, mix together butter, parsley, thyme, rosemary, salt, and pepper. Lather butter herb mixture over the prime rib until all sides are coated. Place prime rib in a large skillet, fat side facing upwards. Cook in the oven at 450F for 15 minutes and then reduce temperature to 325F and cook for an additional 15 minutes per pound of meat or until internal temperature is 110F. Remove from the oven and cover with foil. Let rest for 20 minutes or until the internal temperature reaches 130F.

  3. While the prime rib is resting, heat olive oil in a skillet over medium-high heat and add mushrooms, onion, and garlic. Cook for 5 minutes and stir in chicken bouillon, water, dried basil, and white wine. Mix well and bring to a simmer. Let cook for 5-10 minutes.

  4. Serve mushroom sauce over prime rib and enjoy!
