Stuffed Jack-O-Lantern Peppers

Ingredients

- 4 large orange bell peppers

- 1 pound Braveheart Black Angus beef

- 1 cup cooked rice

- 1 cup diced tomatoes

- 1/2 cup diced onions

- 1/2 cup diced red bell pepper

- 1/2 cup shredded cheddar cheese

- 2 cloves garlic, minced

- 1 teaspoon chili powder

- 1/2 teaspoon paprika

- Salt and pepper to taste

- Olive oil for sautéing

- Cooking spray

Instructions

  1. Carefully cut the tops off the bell peppers and remove the seeds and membranes.

  2. Carve spooky Jack-o-Lantern faces into the front of each bell pepper using a sharp knife. Be creative with your designs!

  3. Preheat your oven to 375°F (190°C).

  4. Heat a tablespoon of olive oil in a skillet over medium heat.

  5. Add the diced onions, red bell pepper, and sauté until they become translucent, about 3-4 minutes.

  6. Stir in the minced garlic and cook for an additional 30 seconds.

  7. Push the sautéed vegetables to the side of the skillet and add the ground beef.

  8. Cook the beef until it's browned and fully cooked, breaking it apart with a spatula as it cooks.

  9. Drain any excess fat.

  10. Season the beef mixture with chili powder, paprika, salt, and pepper.

  11. Stir in the cooked rice and diced tomatoes, allowing everything to meld together for a few minutes.

  12. Using a spoon, carefully fill each carved bell pepper with the beef and rice mixture, packing it in tightly.

  13. Sprinkle shredded cheddar cheese on top of each stuffed bell pepper.

  14. Place the carved tops back onto the peppers.

  15. Arrange the stuffed bell peppers in a baking dish sprayed with cooking spray.

  16. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.

  17. Carefully remove the stuffed bell peppers from the oven.

  18. Place each pepper on a serving plate, and don't forget to reveal the spooky Jack-o-Lantern faces!
