Ingredients:
1 lb Braveheart sirloin steaks, cut into thin slices
1/4 cup olive oil
1 tablespoon smoked paprika
2 cloves garlic, minced
Salt and pepper, to taste
1 baguette, sliced into 1/2-inch thick rounds
1 cup cherry tomatoes, halved
1/2 cup pitted Kalamata olives, chopped
4 oz feta cheese, crumbled
1/4 cup cream cheese, softened
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon red pepper flakes
Fresh parsley or cilantro, chopped for garnish
Wooden toothpicks or small skewers
Instructions:
Preheat the grill or grill pan to high heat.
Mix the olive oil, smoked paprika, minced garlic, salt, and pepper in a small bowl.
Brush both sides of the steak slices with the spice mixture and grill for 1-2 minutes per side until cooked to your desired level of doneness. Remove from the grill and let cool slightly.
Meanwhile, brush the baguette slices with olive oil and grill for 1-2 minutes per side, until they're toasted and crispy. Remove from the grill and let cool.
To make the whipped feta, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, and red pepper flakes in a food processor. Blend until smooth and creamy.
To assemble the pintxos, spread a dollop of whipped feta onto each baguette slice. Top with a slice of steak, a halved cherry tomato, and some chopped Kalamata olives.
Insert a wooden toothpick or small skewer through the toppings and into the baguette slice to hold everything together.
Repeat with the remaining baguette slices and toppings.
Arrange the pintxos on a serving platter and sprinkle with chopped parsley or cilantro for garnish.
