Ingredients:
- 1 Braveheart center-cut filet, sliced into thin strips 
- 2 tablespoons olive oil 
- 1 pound red potatoes, diced into small pieces 
- 1/2 teaspoon paprika 
- 1/2 teaspoon garlic powder 
- Salt and pepper, to taste 
- 1 jalapeño pepper, seeded and minced 
- 4 eggs 
- Fresh parsley, chopped (optional) 
Instructions:
- Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet. 
- Season the steak strips with paprika, garlic powder, salt, and pepper. 
- Add the seasoned steak strips to the skillet and cook until browned on all sides, about 5 minutes. Remove the steak from the skillet and set aside. 
- Add another tablespoon of olive oil to the skillet. Add the diced potatoes to the skillet and cook until browned and crispy, about 10 minutes. 
- Add the minced jalapeño to the skillet and cook for another 2-3 minutes. 
- Push the potato and jalapeño mixture to the edges of the skillet, creating a space in the center of the skillet. 
- Crack the eggs into the center of the skillet. Cook until the egg whites are set and the yolks are cooked to your liking. 
- Return the steak strips to the skillet and stir everything together. 
- Sprinkle with chopped parsley (optional) and serve hot.
