1 Braveheart center-cut filet, sliced into thin strips
2 tablespoons olive oil
1 pound red potatoes, diced into small pieces
1/2 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
1 jalapeño pepper, seeded and minced
4 eggs
Fresh parsley, chopped (optional)
Instructions:
Preheat a large skillet over medium-high heat. Add 1 tablespoon of olive oil to the skillet.
Season the steak strips with paprika, garlic powder, salt, and pepper.
Add the seasoned steak strips to the skillet and cook until browned on all sides, about 5 minutes. Remove the steak from the skillet and set aside.
Add another tablespoon of olive oil to the skillet. Add the diced potatoes to the skillet and cook until browned and crispy, about 10 minutes.
Add the minced jalapeño to the skillet and cook for another 2-3 minutes.
Push the potato and jalapeño mixture to the edges of the skillet, creating a space in the center of the skillet.
Crack the eggs into the center of the skillet. Cook until the egg whites are set and the yolks are cooked to your liking.
Return the steak strips to the skillet and stir everything together.
Sprinkle with chopped parsley (optional) and serve hot.
