Spicy Feta Pierogi

Ingredients:

For the pierogi dough:

  • 2 cups all-purpose flour

  • 1/2 tsp salt

  • 1 large egg

  • 1/2 cup warm water

  • 1 tbsp olive oil

For the filling:

  • 1 lb Braveheart Black Angus beef

  • 4 oz feta cheese, crumbled

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh dill

  • 1/4 cup chopped green onions

  • 1/2 tsp red pepper flakes (adjust to taste)

  • Salt and pepper to taste

  • 1 tbsp olive oil

For the toppings:

  • 1/4 cup melted butter

  • 2 cloves garlic, minced

  • 1/2 tsp red pepper flakes (adjust to taste)

  • Sour cream for serving

Instructions:

  1. Make the pierogi dough: Combine the flour and salt in a large bowl. Add the egg, warm water, and olive oil, and mix until a smooth dough forms. Knead the dough for a few minutes, then cover it with a damp cloth and let rest for 30 minutes.

  2. Make the filling: Heat the olive oil over medium-high heat in a large skillet. Add the ground beef and cook until browned and cooked through. Drain any excess fat. Add the crumbled feta cheese, parsley, dill, green onions, red pepper flakes, salt, and pepper, and stir until well combined. Remove from heat.

  3. Roll out the dough on a floured surface to 1/8 inch thickness. Use a round cookie cutter or a glass to cut out circles of dough.

  4. Place a small spoonful of the beef and feta filling in the center of each dough circle. Fold the dough over to form a half-moon shape, and press the edges together to seal.

  5. Bring a large pot of salted water to a boil. Add the pierogi, a few at a time, and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a plate.

  6. In a small saucepan, melt the butter over medium heat. Add the minced garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.

  7. Drizzle the melted butter and garlic mixture over the cooked pierogi, and sprinkle with additional red pepper flakes if desired. Serve hot with a dollop of sour cream on top.
