Southwest Beef Omelette

For the omelette:

  • 4 large eggs

  • 2 tablespoons milk

  • Salt and black pepper, to taste

  • 1 tablespoon olive oil

  • 1lb Braveheart Black Angus Burger meat (cooked)

  • 1/4 cup diced red bell pepper

  • 1/4 cup diced green bell pepper

  • 1/4 cup diced red onion

  • 1/4 cup canned black beans, drained and rinsed

  • 1/4 cup shredded cheddar cheese

  • 1/4 cup diced ripe tomatoes

  • 2 tablespoons chopped fresh cilantro (for garnish)

  • Sliced jalapeños (optional, for added heat)

For the Southwest seasoning:

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (adjust to taste)


  1. Heat a skillet over medium-high heat.

  2. Add a touch of olive oil to the skillet and cook the diced Braveheart Black Angus Burger meat until it's browned and slightly crispy. Set aside.

  3. Mix the chili powder, cumin, paprika, and cayenne pepper in a small bowl if you want some heat. Set aside.

  4. Add a little more olive oil if needed in the same skillet used for the beef.

  5. Add the diced red and green bell peppers and red onion. Sauté until they become tender, about 34 minutes.

  6. If using the Southwest seasoning, sprinkle it over the sautéed vegetables and mix well.

  7. Add the black beans and cooked Braveheart Black Angus Burger meat to the skillet. Stir to combine and heat everything through. Remove from heat and set aside.

  8. Whisk together the eggs, milk, salt, and black pepper in a bowl until well combined.

  9. Heat a nonstick skillet over medium heat and add a little olive oil to coat the bottom.

  10. Pour half of the egg mixture into the skillet and swirl it around to cover the bottom evenly.

  11. Let the eggs cook undisturbed for about a minute until the edges start to set.

  12. Sprinkle half of the shredded cheddar cheese evenly over one-half of the omelette.

  13. Spoon half of the beef and vegetable filling onto the same half of the omelette.

  14. Top with diced tomatoes and sliced jalapeños if you like it spicy.

  15. Gently fold the other half of the omelette over the filling using a spatula.

  16. Cook for another minute or until the cheese melts and the omelette is cooked through but still slightly runny in the center.

  17. Slide the omelette onto a plate and garnish with fresh cilantro.

  18. Repeat the process to make the second omelette.
