Roasted Pumpkin Pasta

  • 2 Braveheart new york strip steaks, thinly sliced

  • 1 pound pasta of your choice

  • 1 small pumpkin, peeled and cut into small cubes

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 1/2 cup beef broth

  • 1/2 cup heavy cream

  • salt and pepper, to taste


  1. Preheat your oven to 400°F (200°C).

  2. In a large mixing bowl, combine the pumpkin, onion, and garlic. Add the basil, oregano, thyme, salt, and pepper, and toss to coat.

  3. Spread the mixture out on a baking sheet and roast in the preheated oven for 20-25 minutes or until the pumpkin is tender.

  4. In the meantime, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.

  5. In a separate pan, heat a little oil over medium-high heat. Add the beef and cook until it is browned on all sides.

  6. When the pumpkin is done, add it to the pan with the beef. Pour in the beef broth and heavy cream, and bring the mixture to a simmer.

  7. Drain the pasta and add it to the pan with the pumpkin and beef. Toss everything together until the pasta is coated in the sauce.

  8. Serve hot, and enjoy!
