Roasted Garlic Ribeye Sandwich
This sandwich is packed with all of the best flavors. Juicy Braveheart ribeye steak is topped with roasted cherry tomatoes, balsamic caramelized onions, and is all held together with a homemade roasted garlic mayonnaise. This dish is the perfect way to elevate your lunch time.
Ingredients
Braveheart Ribeye Steak
1 head of garlic
Olive oil
1 ½ cups cherry tomatoes
1 large onion, sliced
2 tbsp balsamic vinegar
1 cup fresh arugula
Salt and pepper to taste
2 tbsp butter, softened
2 tbsp butter, cold
4 slices sourdough bread
Juice of ½ a lemon
1 egg
1 tbsp white wine vinegar
¼ cup avocado oil
Directions
Season both sides of ribeye steak with salt and pepper. Set aside and allow to get to room temperature.
Cut the top off of the head of garlic and place in foil with salt, pepper, and olive oil. Wrap the foil tightly and set aside.
Line a large baking sheet with foil and add the tomatoes to the pan. Toss with a generous amount of olive oil, salt, and pepper. Place in the oven with the garlic at 425F for 35 minutes or until the garlic and tomatoes are very soft and tender. Set aside.
Melt butter and olive oil in a large skillet and add sliced onions. Let cook, stirring sparingly for 15 minutes. Add salt, pepper, and balsamic vinegar. Let cook for an additional 10-15minutes or until onions are caramelized and brown.
Heat a skillet over medium-high heat and add olive oil and butter. Add room temperature steak and cook for 5 minutes on each side (or until desired doneness). Remove from the heat and let rest before slicing.
To a blender, add avocado oil, egg, white wine vinegar, lemon juice, and roasted garlic. Blend until mixture is smooth and the consistency of mayonnaise.
Butter both sides of bread with softened butter and toast in a pan until golden brown.
Assemble the sandwich by adding a layer of roasted garlic mayonnaise, arugula, roasted tomatoes, caramelized onions, steak and top it off with another layer of mayonnaise.
