Massaman Beef Curry

  • 1 Braveheart Bottom Rounds Flat Roast

  • 2 Tbsp coconut oil

  • 3 shallots, thinly sliced

  • 3 tbsp massaman paste

  • 2 cups coconut milk

  • 2 cups chicken stock

  • 1 bag of baby potatoes, cut into bite-size pieces


  1. Heat coconut oil in a large skillet over medium-high heat. Add beef to the pan and sear on all sides until browned. Remove from the pan and set aside.

  2. Add massaman paste, coconut milk, and chicken stock in a medium-sized bowl. Mix until the paste is dissolved and a smooth texture forms.

  3. Add the seared beef to a slow cooker along with potatoes, shallots, and massaman sauce. Cook on high for 4 hours or until beef in fork tender.

  4. Serve curry with rice, and enjoy!
