Italian Wedding Soup

In the mood for a hearty and flavorful dish? Look no further than this Italian wedding soup. This dish showcases the intense flavors of perfectly seasoned meatballs, tender orzo pasta, crunchy kale, and flavorful broth to create a soup that will have you asking for a second serving. This dish is easy and is sure to impress!


  • 1lb Braveheart Black Angus Burger Meat

  • ½ cup italian breadcrumbs

  • 1 tbsp garlic powder

  • Olive oil

  • 1 medium white onion, diced

  • 5 garlic cloves, minced

  • ½ cup celery, chopped

  • ¾ cup carrots, diced

  • 2 tbsp butter

  • 2 tbsp chicken bouillon

  • 2 tsp red pepper flakes

  • 1 tbsp italian seasoning

  • 1 tbsp salt

  • ½ tbsp pepper

  • 2 quarts chicken broth

  • 1 package orzo pasta, prepared according to package directions

  • Juice of ½ lemon

  • 2 cups kale, roughly chopped

  • 1 cup grated parmesan cheese


  1. In a medium sized bowl, combine ground beef, breadcrumbs, garlic powder, and a dash of salt and pepper. Mix well and form beef mixture into small meatballs. Bake in the oven at 375F for 20-25minutes and set aside to cool.

  2. To a large pot, add a generous amount of olive oil and let heat. Next, add onion, garlic, carrots, celery, seasonings, and butter. Cook vegetables for 6-10 minutes or until they begin to soften. Add chicken broth and bring to a boil.

  3. Once the broth is boiling, add kale, meatballs, and cooked orzo pasta. Cook for 5 minutes.

  4. Serve topped with parmesan cheese and enjoy!
