Ingredients:
- 4 Braveheart sirloin filet steaks 
- Salt and pepper 
- 1 tbsp olive oil 
- 2 garlic cloves, minced 
- 1 tbsp chopped fresh rosemary 
- 1 tbsp chopped fresh thyme 
- 2 cups mixed vegetable medley (carrots, celery, onion, bell pepper, zucchini, etc.), diced 
- 1 cup black lentils, rinsed and drained 
- 2 cups chicken or vegetable broth 
- 1 tbsp balsamic vinegar 
- 1 tbsp chopped fresh parsley 
Instructions:
- Preheat a grill to high heat. 
- Season the filet mignon steaks generously with salt and pepper on both sides. 
- Mix the olive oil, minced garlic, chopped rosemary, and chopped thyme in a small bowl to create a marinade. Brush the marinade over the steaks, making sure to coat them evenly. 
- Grill the steaks for 3-4 minutes on each side for medium-rare or longer if you prefer a more well-done steak. Transfer the steaks to a plate and tent them with foil to keep warm. 
- In a large saucepan or Dutch oven, add the diced mixed vegetables and sauté over medium heat for 3-4 minutes until they start to soften. 
- Add the green lentils and chicken or vegetable broth to the saucepan and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes until the lentils are tender and the liquid has been absorbed. 
- Stir in the balsamic vinegar and chopped parsley to the lentils and mixed vegetables. 
- Divide the lentils and mixed vegetables among 4 plates and top each plate with a grilled filet mignon steak. 
- Serve immediately and enjoy!
