  • 4 Braveheart sirloin filet steaks

  • Salt and pepper

  • 1 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp chopped fresh rosemary

  • 1 tbsp chopped fresh thyme

  • 2 cups mixed vegetable medley (carrots, celery, onion, bell pepper, zucchini, etc.), diced

  • 1 cup black lentils, rinsed and drained

  • 2 cups chicken or vegetable broth

  • 1 tbsp balsamic vinegar

  • 1 tbsp chopped fresh parsley

  1. Preheat a grill to high heat.

  2. Season the filet mignon steaks generously with salt and pepper on both sides.

  3. Mix the olive oil, minced garlic, chopped rosemary, and chopped thyme in a small bowl to create a marinade. Brush the marinade over the steaks, making sure to coat them evenly.

  4. Grill the steaks for 3-4 minutes on each side for medium-rare or longer if you prefer a more well-done steak. Transfer the steaks to a plate and tent them with foil to keep warm.

  5. In a large saucepan or Dutch oven, add the diced mixed vegetables and sauté over medium heat for 3-4 minutes until they start to soften.

  6. Add the green lentils and chicken or vegetable broth to the saucepan and bring to a boil. Reduce the heat to low and simmer for 20-25 minutes until the lentils are tender and the liquid has been absorbed.

  7. Stir in the balsamic vinegar and chopped parsley to the lentils and mixed vegetables.

  8. Divide the lentils and mixed vegetables among 4 plates and top each plate with a grilled filet mignon steak.

  9. Serve immediately and enjoy!
