Chimichurri Steak Skewers

Made with tender, thinly sliced flank steak, these skewers are bathed in a tantalizing marinade consisting of minced chipotle peppers, aromatic garlic, earthy cumin, and rich paprika. Ingredients

For the steak skewers:

  • 1.5 pounds Braveheart sirloin filet steaks, thinly sliced

  • 2 tablespoons chipotle peppers in adobo sauce, minced

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Wooden skewers, soaked in water for 30 minutes

For the chimichurri sauce:

  • 1 cup fresh parsley leaves, chopped

  • 1/4 cup fresh cilantro leaves, chopped

  • 3 cloves garlic, minced

  • 2 tablespoons red wine vinegar

  • 1/2 cup olive oil

  • Juice of 1/2 lemon

  • Salt and pepper to taste

Instructions

  1. Combine the minced chipotle peppers, olive oil, minced garlic, cumin, paprika, salt, and pepper in a mixing bowl. Stir well to create a marinade.

  2. Add the thinly sliced flank steak to the marinade and toss until the steak is well coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

  3. While the steak is marinating, prepare the chimichurri sauce. Combine the chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, lemon juice, salt, and pepper in a separate bowl. Mix well to combine all the ingredients. Set aside and let the flavors meld.

  4. Preheat your grill or grill pan to medium-high heat.

  5. Thread the marinated steak slices onto the soaked wooden skewers, weaving them back and forth onto each skewer.

  6. Place the steak skewers on the preheated grill and cook for 3-4 minutes per side or until desired doneness is reached. Remember to turn the skewers occasionally for even cooking.

  7. Once the steak is cooked, remove the skewers from the grill and rest for a few minutes.
