Ingredients:
1 lb Braveheart Black Angus beef
1 onion, diced
2 cloves of garlic, minced
4 cups beef broth
1 cup diced potatoes
1 cup diced carrots
1 cup diced celery
2 cups shredded cheddar cheese
1/4 cup all-purpose flour
1/4 cup heavy cream
Salt and pepper to taste
Instructions:
In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
Add the diced onion and minced garlic to the pot and sauté until softened.
Add the beef broth, potatoes, carrots, and celery to the pot and bring to a simmer. Cook until the vegetables are tender.
In a small bowl, whisk together the flour and heavy cream until smooth. Gradually stir the mixture into the soup.
Cook the soup for an additional 5-10 minutes or until it has thickened.
Remove the pot from heat, and stir in the shredded cheddar cheese until it is fully melted and incorporated into the soup.
Season the soup with salt and pepper to taste.
