Ingredients:
4 hamburger buns
4 slices of cheddar cheese
4 large eggs
1 cup shiitake mushrooms, sliced
2 cups micro greens
2 tbsp olive oil
Salt and pepper to taste
For the beet sauce:
1 cup cooked beets
1/4 cup mayonnaise
1 tbsp lemon juice
1 tsp honey
Salt and pepper to taste
Instructions:
Make the beet sauce: In a blender or food processor, combine the cooked beets, mayonnaise, lemon juice, honey, salt, and pepper. Blend until smooth. Set aside.
Combine the ground beef, salt, and pepper in a large bowl. Mix well, then form into four equal-sized patties.
Heat a large skillet over medium-high heat. Add the olive oil and shiitake mushrooms, and sauté for 5-7 minutes, until the mushrooms are tender and golden brown. Remove from the skillet and set aside.
In the same skillet, cook the beef patties for 3-4 minutes per side, or until they are cooked to your liking. During the last minute of cooking, add a slice of cheddar cheese to each patty and cover the skillet with a lid to allow the cheese to melt.
In a separate skillet, fry the eggs over medium heat until the whites are set, but the yolks are still runny.
Toast the hamburger buns.
To assemble the burgers, spread a generous amount of beet sauce on the bottom half of each bun. Add a beef patty with melted cheese, a fried egg, and a spoonful of sautéed shiitake mushrooms, and a handful of micro greens. Top with the other half of the bun.
Serve hot, and enjoy!
