Fresh Beef Ravioli with Lemon Garlic Sauce

Want to feel like a seasoned professional chef? This recipe is the perfect dish to try. This homemade beef ravioli is so satisfying and will make you feel so accomplished. It’s made with hand rolled pasta and quality Braveheart beef to create the tastiest of flavors. This dish is sure to become your new favorite recipe.

Ingredients

  • 1lb Braveheart Black Angus Beef

  • 2 cups all purpose flour

  • 3 eggs

  • 2 egg yolks

  • Salt

  • 1 cup ricotta cheese

  • ⅓ cup parmesan cheese, grated

  • 1 tbsp garlic powder

  • ½ tbsp parsley

  • ¼ cup salted butter

  • 4 garlic cloves, minced

  • 1 cup heavy cream

  • 2 shallots, diced

  • 2 tsp red pepper flakes

  • Juice of half a lemon

  • ½ cup powdered parmesan cheese

Directions

  1. Add flour in a mound shape to a large cutting board. Using a bowl, flatten the center of the mound . Add eggs to the center along with a pinch of salt. 

  2. Using a fork, gently begin to whisk the eggs to create a dough while incorporating flour into the edges (Make sure to avoid letting the egg spill out of the sides). 

  3. Once the dough begins to form, knead the dough until there are no lumps and it is one large ball. 

  4. Wrap in plastic wrap and set in the fridge for 20 minutes.

  5. Meanwhile, add ground beef to a pan on medium-high heat and cook until meat is thoroughly browned. 

  6. Remove from the pan and let cool.

  7. In a medium bowl, add ricotta, parmesan, garlic powder, parsley, salt and pepper and mix well. 

  8. Add the cooked ground beef to the mixture and stir until well combined.

  9. Remove dough from the fridge and add to a floured work surface. 

  10. Roll dough until it is as thin as possible (can also use a pasta roller). 

  11. Once dough is thinly rolled, use a ravioli cutter or knife to score square shapes onto half of the dough. 

  12. Add 1-2 tbsp of filling to the center of the square and fold the dough over to cover.

  13.  Use your knife or ravioli cutter to cut out the ravioli and remove excess dough. 

  14. Using a fork score the edges of the ravioli squares to ensure it is sealed.

  15. Add ravioli to a large pot of boiling water and let cook for 4-5 minutes or until the ravioli floats to the top.

  16. Meanwhile, add shallots, minced garlic, red pepper flakes, salt, pepper, and butter to a pan. 

  17. Cook until shallots are translucent and garlic is fragrant and then add heavy cream and lemon juice. 

  18. Let simmer until the sauce begins to thicken, add powdered parmesan, and mix well. 

  19. Add ravioli to the sauce and mix until pasta is fully coated.

  20. Let cool and enjoy!

Beef Croquettes with Dijon Aioli

Ingredients

  • 1 lb Braveheart Black Angus Ground Beef

  • 4 large potatoes, peeled and chopped

  • 2 tbsp butter

  • 1 white onion, diced

  • 2 tbsp Adobo seasoning

  • 4 garlic cloves, minced

  • 1 cup breadcrumbs

  • 4 eggs, beatem

  • 1 cup all purpose flour

  • Canola oil

 

For the sauce:

 

  • 1 garlic clove

  • Salt

  • 1 egg white

  • 2 egg yolks

  • ½ cup Canola oil

  • 1 tbsp whole grain mustard

  • 1 tbsp dijon mustard

  • 1 tbsp lemon juice

  • 2 tsp lemon zest

Directions

  1. Add potatoes to a large pot of water and bring to a boil. Let boil for 15-20 minutes or until potatoes are tender. Drain water and remove from heat.

  2. Heat a skillet to medium-high heat and add butter. 

  3. Once butter is melted, add onions and garlic. Cook until onions become translucent and add ground beef.

  4. Cook until ground beef is thoroughly browned and fully cooked. Season mixture with salt, pepper, and adobo seasoning. Mix well.

  5. Add potatoes to a large bowl. Using a potato masher, mash potatoes until the consistency is smooth and there are few lumps.

  6. Add ground beef mixture to potatoes and mix well.

  7. Divide mixture into equal parts and for small balls of the mixture.

  8. Place balls of mixture on a sheet pan and let cool in the fridge for 20 minutes.

  9. Roll balls of mixture in flour, eggs, and then breadcrumbs. Repeat until all balls are coated.

  10. Heat oil in a large pan and add croquettes. Let cook until croquettes are golden brown on all sides. 

  11. To a blender, add garlic clove and pulse until clove is minced.

  12. Next, add a big pinch of salt and then egg yolks and whites. Blend mixture and slowly add canola oil.

  13. Continue blending until the sauce begins to thicken. Once the sauce is thick, add whole grain mustard, dijon mustard, lemon zest, and lemon juice. Blend until everything is well combined and consistency is smooth. 

  14. Add aioli to a bowl and serve with croquettes.

  • 2 Braveheart Black Angus Burgers

  • 2 lobster tails, cooked

  • 6 slices bacon, cooked

  • 2 brioche buns

  • 2 slices pepper jack cheese

  • Zest of 1 lemon

  • 3 tbsp mayonnaise

  • 4 chives, thinly sliced

  • 2 cloves garlic, minced

  • Juice of ½ lemon

  • 1 ½ tsp dill

  • salt and pepper

  • 2 tbsp butter, softened

  • 1 tsp paprika

  • Lettuce

  • Tomato, sliced

Directions

 

  1. Roughly chop cooked lobster tails and add to a medium sized bowl. 

  2. Add mayonnaise, paprika, chives, garlic, lemon zest, lemon juice, salt, pepper, and dill to the bowl. Mix well until all ingredients are combined.

  3. Heat a grill to medium-high heat and cook burger patties until desired doneness. 

  4. Add cheese slices to the top and continue to cook until the cheese is melted. Remove from the grill.

  5. Butter the inside of the brioche buns. Add to a small pan and cook until the buns are toasted and golden brown.

  6. To the bun, add lettuce, tomato, burger patty, bacon, and lobster salad. Top with remaining bun, serve and enjoy!

  • 1 teaspoon sesame oil

  • 1 teaspoon white pepper

  • 2 teaspoons sugar

  • ½ tablespoon salt

  • ¼ cup carrots, shredded

  • 1 (50-piece) package round dumpling wrappers 

  • 4 tsp soy sauce

  • 1 tsp chili oil

  • 2 tbsp rice wine vinegar

  • ½ tsp red pepper flakes

  • 1 tbsp green onions, thinly sliced

Directions

  1. In a large bowl, combine ground beef, carrots, ginger, green onions, sesame oil, 2tbsp soy sauce, rice cooking wine, and seasonings. Mix until well combined.

  2. Lay out wonton wrappers and place a small amount of meat in the center of each. Line the edges with water and seal the meat into the wrapper by folding the outer edge. 

  3. Add a ½ inch of oil to a large pan on medium high heat. Add dumplings to the pan and let cook until the bottom is golden brown and then flip. Make sure the filling is well cooked and wonton wrappers are soft.

  4. Once cooked, remove dumplings from the pan and let cool.

  5. While dumplings are cooling, combine remaining soy sauce, green onions, vinegar, chili oil, and red pepper flakes to a small bowl. Whisk ingredients together.

  6. Serve with dumplings and enjoy!

Spinach and Beef Stuffed Shells

If you love a dish packed with quality beef and melted cheese then this is the recipe for you! These pasta shells are stuffed with spinach, beef, and a mixture of cheeses. Its rich flavor is sure to impress any guest.

Ingredients

  • 1/2 lb Braveheart Black Angus Beef

  • 1 box jumbo pasta shells

  • 2 cups spinach

  • ½  cup marinara sauce

  • ½ cup alfredo sauce

  • 1 cup mozzarella cheese, shredded

  • 1 cup parmesan cheese, shredded

  • 2 tsp tomato paste

  • 1/2 cup onions, diced

  • 2 tsp garlic, minced

  • 1 tsp fresh basil

  • 1 tsp garlic powder

  • 1 tsp oregano

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees and cook pasta shells according to the package. 

  2. Heat a large skillet to medium high heat. To the skillet, add the ground beef and cook for 2-3 minutes. Add chopped onions, garlic, basil, oregano, tomato paste and salt + pepper to taste. Simmer for 2 minutes then add the spinach and simmer for 2 more minutes.

  3. Once cooked, stuff shells with meat mixture and line them in a casserole dish. Mix marinara sauce with alfredo sauce and pour over the top. Sprinkle mozzarella cheese and parmesan cheese and cook for 15 minutes at 400°F.

  4. Let cool and enjoy!
