  • Braveheart Bottom Round Flat Roast

  • ½ onion

  • 1 head of garlic + 6 cloves

  • Salt

  • 5 bay leaves

  • Vegetable oil

  • 10 cups water

  • 11 guajillo chilis

  • 3 ancho peppers

  • 7 peppercorns

  • 5 whole cloves

  • 1 tsp oregano

  • 1 tsp thyme

  • 1  tbsp cumin

  • 3 tbsp beef bouillon

  • 8 corn tortillas

  • ½ onion, diced

  • ½ cup chopped cilantro

  • 1 lime

  • 1 cup oaxaca cheese, shredded

  1. Cut bottom round flat roast into bite sized cubes. Add to a pot with 8 cups of water, half onion, head of garlic, 2 tbsp salt, and bay leaves. Bring to a boil and reduce heat to medium-high. Let cook for one hour while frequently skimming the fat off the top of the water with a spoon.

  2. In a large skillet, heat vegetable oil and add guajillo chilis, ancho peppers, and 6 garlic cloves. Let cook, stirring often, until the peppers are lightly toasted (about 2-5 minutes).

  3. Remove half onion and head of garlic from the pot with the beef and add to a blender along with toasted peppers, garlic, peppercorn, whole cloves, and 2 cups of water. Blend ingredients until smooth.

  4. Pour the pepper mixture into a sieve and strain over the pot of beef. Strain until all the sauce has gone through and only the pulp of the peppers remains and discard the pulp.

  5. Add oregano, thyme, cumin, and beef bouillon to the pot and mix well.

  6. Reduce the heat to low and let simmer, covered, for 2 hours. Once beef is fully cooked and tender, remove from the pot and shred. Once shredded, place beef back in the pot.

  7. Dip corn tortilla in the beef broth and add to a pan on medium-high heat. Top tortilla with shredded beef, cilantro, onion, and cheese. Fold tortilla over and let cook until cheese is melted and tortilla is crispy. Remove from the pan and sprinkle with lime juice.

  8. Serve with a cup of the beef broth and enjoy!
