Beef Ragout Pasta

  • 1 pound Braveheart Bottom Rounds Flat Roast, cut into bite size pieces.

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 medium carrot, peeled and diced

  • 1 medium celery stalk, diced

  • 1 cup beef broth

  • 1 can (14.5 ounces) diced tomatoes, undrained

  • 1 tablespoon tomato paste

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 8 ounces pasta

  • Fresh parsley, for garnish (optional)


  1. In a large saucepan or Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes.

  2. Add the onion, garlic, carrot, and celery to the pan and cook for an additional 3-4 minutes, until the vegetables are tender.

  3. Add the beef broth, diced tomatoes, tomato paste, oregano, thyme, salt, and pepper to the pan. Stir to combine.

  4. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, or until the beef is tender and the sauce has thickened.

  5. While the beef is cooking, bring a pot of salted water to a boil and cook the pasta according to the package instructions. Drain the pasta and set aside.

  6. When the beef is done cooking, stir in the cooked pasta.

  7. Garnish with fresh parsley, if desired, and serve hot. Enjoy!
