Try this easy and flavorful recipe for an easy weeknight meal. It is created with Braveheart Black Angus beef and a medley of cheeses that combine to create a cheesy and delicious flavor. Pair this dish with a side of garlic bread or a salad to experience a delicious meal.
Ingredients
1lb Braveheart Black Angus Burger Meat
1 cup ricotta cheese
1 cup parmesan cheese, grated
½ cup mozzarella cheese, grated
⅓ cup fresh basil, chopped
1 package large manicotti, prepared to package directions
Olive oil
½ white onion, diced
4 garlic cloves, minced
2 tbsp italian seasoning
1 tbsp red pepper flakes
Salt and pepper to taste
1 can of tomato paste
⅓ cup vodka
1 ½ cup heavy cream
Directions
Heat a large skillet over medium high heat and cook the beef until browned. Transfer beef to a bowl and mix in ricotta, parmesan cheese, and basil.
Heat oil in the skillet over medium-high heat and add onions, garlic, red pepper flakes, italian seasoning, and salt and pepper. Cook until onions are translucent and add tomato paste to the skillet. Cook for 5-8 minutes or until tomato paste turns a dark, rich red color.
Add vodka to the skillet and mix well, making sure to scrape all the bits in the pan. Cook for 3 minutes then add heavy cream and mix well.
Using a piping bag or spoon, stuff the cooked manicotti with the beef mixture. Place stuffed manicotti in a greased pan and pour the vodka sauce over. Sprinkle mozzarella cheese over the manicotti and bake at 350F for 10-15 minutes or until cheese is bubbly and browned.
