Beef Manicotti with Vodka Sauce

Try this easy and flavorful recipe for an easy weeknight meal. It is created with Braveheart Black Angus beef and a medley of cheeses that combine to create a cheesy and delicious flavor. Pair this dish with a side of garlic bread or a salad to experience a delicious meal.

Ingredients

  • 1lb Braveheart Black Angus Burger Meat

  • 1 cup ricotta cheese

  • 1 cup parmesan cheese, grated

  • ½ cup mozzarella cheese, grated

  • ⅓ cup fresh basil, chopped

  • 1 package large manicotti, prepared to package directions

  • Olive oil

  • ½ white onion, diced

  • 4 garlic cloves, minced

  • 2 tbsp italian seasoning

  • 1 tbsp red pepper flakes

  • Salt and pepper to taste

  • 1 can of tomato paste

  • ⅓ cup vodka

  • 1 ½ cup heavy cream

Directions

  1. Heat a large skillet over medium high heat and cook the beef until browned. Transfer beef to a bowl and mix in ricotta, parmesan cheese, and basil.

  2. Heat oil in the skillet over medium-high heat and add onions, garlic, red pepper flakes, italian seasoning, and salt and pepper. Cook until onions are translucent and add tomato paste to the skillet. Cook for 5-8 minutes or until tomato paste turns a dark, rich red color.

  3. Add vodka to the skillet and mix well, making sure to scrape all the bits in the pan. Cook for 3 minutes then add heavy cream and mix well.

  4. Using a piping bag or spoon, stuff the cooked manicotti with the beef mixture. Place stuffed manicotti in a greased pan and pour the vodka sauce over. Sprinkle mozzarella cheese over the manicotti and bake at 350F for 10-15 minutes or until cheese is bubbly and browned.

  5. Let cool, serve, and enjoy!
