Beef Biscuit Bites

These Beef Biscuit Bites are a delightful twist on classic finger foods. Tender beef frank coins are nestled within flaky, golden puff pastry squares, creating bite-sized pockets of savory goodness. These Beef Biscuit Bites are sure to be a crowd-pleaser, disappearing as fast as you can make them!

Ingredients:

  • 1 sheet of frozen puff pastry, thawed

  • 4 Braveheart Ridgecrest Franks

  • 1 egg, beaten (for egg wash)

  • Sesame seeds or poppy seeds (optional, for garnish)

  • Ketchup and mustard (for dipping)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.

  2. Slice each beef frank into coins about 1 inch (2.5 cm) thick. You should get approximately 4 coins from each frank, depending on its size.

  3. Set the beef frank coins aside while you work on the puff pastry.

  4. Unfold the thawed puff pastry sheet on a lightly floured surface.

  5. Cut the puff pastry sheet into 16 equal squares using a sharp knife or a pizza cutter. You can cut it into 4 rows and 4 columns.

  6. Place a beef frank coin in the center of each puff pastry square.

  7. Fold the corners of the puff pastry square up and over the beef frank coin to create a neat envelope or pocket. Press the edges to seal, ensuring that no filling is exposed.

  8. Using a pastry brush, lightly brush the top of each puff pastry bite with beaten egg. This will give them a beautiful golden color when baked.

  9. You can sprinkle sesame or poppy seeds on top of each puff pastry bite for added texture and flavor.

  10. Place the assembled bites on the prepared baking sheet, leaving some space between each one to allow for expansion.

  11. Bake in the preheated oven for 15-20 minutes or until the puff pastry is golden brown and puffed up, and the beef franks are heated through.

  12. Remove the puff pastry beef frank bites from the oven and let them cool for a few minutes before serving.
