Beef Bao Buns

Ingredients:

For the beef filling:

  • 1 pound Braveheart Top Sirloin steak, thinly sliced

  • 2 tablespoons soy sauce

  • 2 tablespoons oyster sauce

  • 2 tablespoons hoisin sauce

  • 2 cloves garlic, minced

  • 1-inch piece ginger, grated

  • 2 tablespoons vegetable oil

  • 1 onion, thinly sliced

  • 1 red bell pepper, thinly sliced

  • 2 green onions, chopped

For the bao dough:

  • 3 cups all-purpose flour

  • 2 tablespoons sugar

  • 1 teaspoon active dry yeast

  • 1/2 teaspoon salt

  • 1 cup warm water

  • 1 tablespoon vegetable oil

  • Additional flour for dusting

For serving:

  • Hoisin sauce

  • Sriracha sauce

  • Fresh cilantro leaves

  • Sliced cucumber (optional)

Instructions:

  1. Combine the soy sauce, oyster sauce, hoisin sauce, minced garlic, and grated ginger in a bowl. Add the sliced Braveheart Top Sirloin steak and marinate for at least 30 minutes or up to overnight in the refrigerator.

  2. To make the bao dough, combine the all-purpose flour, sugar, yeast, and salt in a large mixing bowl. Gradually add warm water while stirring with a wooden spoon until a rough dough forms.

  3. Transfer the dough to a floured surface and knead for about 10 minutes until it becomes smooth and elastic. Shape the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

  4. While the dough is rising, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak slices and stir-fry for 3-4 minutes until browned and cooked. Remove the beef from the skillet and set aside.

  5. Add the sliced onion and bell pepper and stir-fry in the same skillet for about 2 minutes until slightly softened. Return the cooked beef to the skillet and stir in the chopped green onions. Remove from heat and set aside.

  6. Once the dough has doubled in size, punch it down and transfer it to a floured surface. Divide the dough into 12 equal pieces and roll each piece into a small ball. Flatten each ball with a rolling pin into a round disk about 4 inches in diameter.

  7. Spoon about 1-2 tablespoons of the beef filling onto the center of each dough disk. Gather the edges of the dough and pleat them together, sealing the filling inside. Repeat with the remaining dough and filling.

  8. Place the filled buns on squares of parchment paper and arrange them in a steamer basket, leaving some space between each bun. Cover the steamer basket with a clean cloth and let them rise for another 20-30 minutes.

  9. Meanwhile, fill a large pot or wok with water and bring it to a boil. Place the steamer basket on top of the pot, making sure the water doesn't touch the buns. Steam the buns for about 15-20 minutes until they are cooked through and the dough is fluffy.

  10. Once the buns are steamed, carefully remove them from the steamer basket and let them cool for a few minutes. Serve the beef bao buns warm, garnished with hoisin sauce, sriracha sauce, fresh cilantro leaves, and sliced cucumber if desired.
